Course 1: Spring Pea Budino

Savory custard infused with fresh spring peas, garnished with arugula and braised radish.

Course 2: Shrimp Toast

Pulled shrimp tossed in a fennel and lemon dressing, served on Josey Baker bread and garnished with sunflower greens and trout roe.

Course 3: Egg Yolk Raviolo

Housemade pasta dough is stuffed with goat cheese, onion jam, and an egg yolk. Garnished with asparagus, pancetta and brown butter.

Course 4: Mascarpone Polenta

Yellow corn grits stewed with mascarpone cheese.

Course 5: Lemon and Fennel Braised Chicken

Chicken thighs braised with caramelized fennel and preserved lemon, garnished with fried herbs.

Course 6: Pudding and Caramel

Milk pudding with rosewater caramel and seasonal fruit.
