Butter

Like a pretzel, but baked with molasses and sesame seeds. Served with whipped yogurt butter. Most common street food in Istanbul!

Course 2: Olives and Fermented Pepper Emulsion

Marinated olives with candied walnuts and roasted garlic. The marinate for the olives should remind the educated diner of Turkish 'acuka', the breakfast pepper spread.

Course 3: Feta Mousse and Seasonal Marmalade

Briny warm feta foam with sweet, unctuous marmalades.

Course 6: Turkish ratatouille marmalade with soft-boiled egg and yogurt. The latter combination is called jilbir.

Course 7: Tik Tik Borek

Phyllo and butter, layered, rolled into a snail shape, and baked until golden brown. Topped with honey cream, sour cherry, almonds, and caramelized goat milk.

Course 8: Kaymak and Honey

Turkish clotted cream, honey, and sea salt.
